Food Mood: Couscous, Berber Deli
There is nothing simpler than this food. Or tastier. Or versatile. Buy a pack of couscous - fine or medium grain, it doesn't really matter. Put 250 g in a large bowl.
Boil 1 l water with 2 teaspoons of red curry paste, half teaspoon salt, 2 spoons of olive oil, pepper, and any other spices you have in the kitchen. The spicier and more exotic, the better. When the mix starts boiling, add 1 can of lentils or sweet peas and boil for two more minutes.
Finely chop a bunch of fresh coriander or cilantro and one medium onion, then set everything over the couscous grains in the bowl and cover with the hot broth, then mix everything well. Cover the bowl tightly with plastic foil and set aside for 40 minutes. Fluff it with a fork before serving. It serves 4 and goes with everything.
