Melted cheese dip - a great way to bring friends and family together around the same pot. A wonderful reason for a communal table with lots of red wine and golden toast. Yumminess.
Ingredients:
- 1/2 pound Swiss, shredded
- 1/2 pound Gruyere cheese, shredded
- 2 tablespoons flour
- 1 garlic clove
- 1 cup dry white wine
- 1 tablespoon lemon juice
- 1 tablespoon cherry brandy
- 1/2 teaspoon dry mustard
- 1 pinch of freshly grated nutmeg
Coat the shredded cheese with the flour. Crush the garlic clove and simmer it in a pot with the wine and the lemon juice. Stir the cheese into the wine little by little. Stir constantly, to prevent the cheese from forming balls, and cook until creamy. Once the dip is smooth, stir in the brandy, mustard, and nutmeg. Do not boil. When serving, place the pot over a small flame to prevent seizing. Bring slices of raw vegetables, toast, and your best red wine. Enjoy!
